Taco Cart Beginnings
Amid the late-night food scene in downtown Portsmouth stood Philbur’s, a local food cart slinging tacos to hungry patrons enjoying the bar scene. Known for its pulled pork and pulled chicken tacos, Philbur’s featured homemade recipes paired with notable sides that made for the perfect midnight snack. Over two seasons, customer after customer asked where they could get the sauces that made Philbur’s tacos stand out. At the end of the 2018 season, the Stratos family decided to bottle their success.
After hundreds of ingredient combinations and taste tests, the locally crafted Philbur’s Hot Sauce No. 6 and Philbur’s Hot Sauce No. 10 were developed. These sauces are state-approved shelf-stable with no added preservatives or sugars, making them a pantry staple. Keeping their business local was important to the Stratos family and they have a co-packer in New Hampshire who produced the first 672-bottle run on September 7, 2019.

Philbur’s Hot Sauce is hot, hot, hot! Featured in many local restaurants and stores just weeks after its initial production, this sauce is flying off the shelves. The No. 10 sauce, boasting an initial sweet herb flavor with a ghost pepper kick, has already sold out. The No. 6 sauce, with a fresh herb flavor and sweet medium heat, is down to the last few cases. A second production was run less than 30 days after the initial launch!
Phil, also known as Philbur due to a long-standing family nickname, his wife Lisa and their three sons have organically grown a late-night taco cart into a successful sauce and condiment company.
